When I share my baked goods, one of the most common questions I am asked is “How are you not 300 pounds?” Well besides self-control and portion-control, I have one word for you: Superfood.
I am a huge fan of superfoods because they have an endless list of benefits. I mean, how can you read the antioxidant powers of blueberries and not want to add them to your diet? I aim to have at least one at each meal, whether it be avocado, salmon, or quinoa. For breakfast I have Greek yogurt with blueberries and oats–three superfoods in one meal!
Salads on the other hand are not usually my go to meal. It is just one of those things that always tastes better when someone else makes it. But after making those Oreo stuffed chocolate chip cookies, I promised a healthy post and, to be honest, I was craving a salad. So for lunch today I made a spinach salad with strawberries, avocado, edamame, and walnuts all tossed in a honey balsamic vinaigrette.
The balsamic vinaigrette is a combination of tart balsamic vinegar, extra virgin olive oil, and honey as a natural sweetener. This pairs well with the sweetness of the strawberries and raw spinach leaves that are packed with iron and other essential minerals. Tossed in are protein packed edamame and cubed avocado, which provides plenty of healthy fats. I topped it off with some walnuts because, well, I like walnuts. This ended up being the best homemade salad I’ve ever eaten!
