Summer is just around the corner, the sun is finally shining on a consistent basis, and a busy month of birthdays and graduations is drawing to a close. Such celebrations call for trying my chocolate oreo cupcakes recipe.
This past weekend was spent celebrating my brother, who, by some stroke of luck, managed to turn 19 and graduate from high school within a span of two days. Despite the fact that I’m all for finding (any and all) excuses to celebrate on a daily basis, Stewart’s birth and high school commencement provided two legitimate reasons to throw a party.
I was tasked with baking 100 cupcakes for a gaggle of freshly graduated prep school boys. While 100 cupcakes may sound like a daunting feat, I popped in the baking playlist and got down to it. To appeal to the masses, I presented a variety: red velvet with cream cheese frosting (a tried and true favorite, which just happen to include the alma mater’s red and white color combo), vanilla with classic buttercream, and a new addition… chocolate Oreo cupcakes.
Oreos—my brother’s favorite food group—are placed at the bottom of the full-sized cupcake liner providing a pleasant surprise at first bite. After a bit of a frosting mishap (whipped cream frosting does not stand a chance against warm June days), I instead created a chocolate frosting with Oreo crumbles on top—a chocolate lover’s dream. For display and easy access, I built a cupcake tower (in matching school colors)… and let’s just say there was no crumb left behind.
