My newfound love for mini whoopie pies is blossoming. Ever since I made the mini carrot cake whoopie pies last month I have been dying to try another recipe. I chose banana-flavored mini whoopie pies with three filling choices: vanilla, peanut butter and Nutella. They all sounded so good, I made all three!
I had a couple of browning bananas in the kitchen and while usually I’ll make a banana bread, but this time I wanted to try banana whoopie pies. Last time I made mini whoopie pies it was incredibly tedious to spoon and shape each little cookie so I transferred the dough to a frosting bag to quicken the process.
This method worked so much better. I was able to get the dough onto the cookie sheet faster and have perfectly shaped cookies, which is important when sandwiching them together. The one suggestion I have is after you pipe the dough onto the parchment paper, dampen your fingers with a wet paper towel and lightly press on the tops of the cookies to get rid of any peaks.
Now for the filling. For the life of me, I could not decide which flavor would be best between these mini whoopie pies. Vanilla sounded delicious and incredibly sweet, but peanut butter is like banana’s best friend and then there’s Nutella. Who can say no to bananas and Nutella? I could not so I made all three fillings. I was able to try each flavor combo and I must say I’m a little partial to the peanut butter one!
