“All I have is butter and sugar!” my cousin exclaimed from Shanghai.
My mom’s sisters visited this past weekend and they scheduled a Facetime with my cousin Logan who has been across the world for most of her adult life. She gushed about how much she loved my blog and how incredible my photos looked, but her tone quickly changed when she confessed that she had not tried not one of the recipes. Her excuse? “All I have is butter and sugar!”
I introduce you to the simplest recipe you will ever find. Three ingredients… butter, flour, and sugar. That’s it. It is essentially the base for any cookie. When using only those three ingredients, the result is shortbread cookies, a buttery, light cookie that will please anyone’s tastebuds.
While the cookies are delicious on their own, the simple recipe and basic flavor allows for some experimenting. Add some almond extract (my fave) or vanilla for a classic flavor, dip the cookies in chocolate once they are cooled (if you have that type of patience), or make thumbprint cookies with your favorite flavor jelly. Whatever you decide on, you will not be disappointed in this cookie. You can make them anytime, anywhere, even in Shanghai, Logan!
