Raise your hand if birthday cake keeps you coming back for more *raises hand.* A sliver here and a silver there turns into a whole slice. I’m always cutting the corner piece for some extra frosting action. There is this a certain taste that comes with birthday cake that you can’t quite put your finger on, but you know only birthday cake has this taste.
Tbh it’s probably just a sh*t ton of sugar, but in the case of these boozy birthday bars, I think it’s the Amaretto. Almond flavoring is on the top of my list when it comes to baking. (Have you seen my Scandinavian Almond Bars? To die for.) Amaretto liquor is essentially almond extract in a milder (and more alcoholic) form.
I was worried about putting such strong flavors into one dessert, but in this case it worked. If anything, I think the Amaretto made the birthday cake flavor even stronger and that, in my opinion, is never a problem. Boozy birthday bars are, in my opinion, more satisfying than actual birthday cake because they have a better texture—dense, almost gooey—and go above and beyond with the combination of Amaretto and birthday cake.
In short, these dense, pudgy, boozy birthday bars are sprinkle-covered sugar bombs, worth every bite and are the perfect treat for indulging on your big day. So go ahead, make them!
