I couldn’t think of a better way to celebrate Valentine’s Day, or rather Galentine’s Day, than with the Parks & Rec character’s favorite food—waffles.
Leslie Knope’s love for waffles is only rivaled by her love for her friends. Not to brag, but I have had a few friends say I remind them of Leslie Knope/Amy Poehler. I see it… a type A, optimistic, blonde who goes above and beyond for her beliefs and the people who are close to her. OR it could be because she says things like this…
Either way Leslie Knope has a good heart and a good appetite. So as an ode to Leslie, I have made the fluffiest waffles I could and topped them with fresh whipped cream and pure maple syrup.
The perfect waffle is light and fluffy on the inside and crispy on the outside. To achieve the ultimate fluffiness I used whipped egg whites and baking powder for extra rise. For that crispy exterior, there’s a bit of oil in the batter. Be absolutely sure that you whip those egg whites to a stuff peak and very gently fold them into the batter. If you over mix the egg whites in the batter, the waffles will fall flat and lose their fluffiness!
