Happy (almost) fall! I can’t wait for the leaves to start turning color and the air to get brisk. I’m so eager to get in the fall mood that I baked caramel apple cake. It has all the seasonal flavors!
When I bake a cake, I usually go all in. I’m talking layered cake with filling, frosting and decorations. This apple cake on the other hand is more simple.
From a glimpse, the cake almost appears to be blondies, but don’t be fooled. The cake is soft, light and filled with apple pieces. Seriously every bite melts away in your mouth with cinnamon apple flavor.
The cake is made in a sheet pan, which means one layer, slice and serve. It needed a little something extra so I made homemade caramel soft to serve on top of each piece. That simple addition took this cake from good to great.
Side note: if you’ve never made caramel at home, I highly recommend it. It’s a lot easier than you think and you can store it in a jar for later use!
Caramel apple cake would be perfect to make for a fall weekend with friends. Go apple picking and then bake this cake with your harvest! I suggest using Honeycrisp or Braeburn apples. Sometimes I mix two different types of apples together. I find that Granny Smith adds a little tartness!
For a quick and easy way to peel the apples, try using an apple peeler/corer. It makes the work go by 10 times faster!
