How’s everyone doing? Staying busy? The mayor of Denver just issued a stay-at-home order so now I’m REALLY stuck at home baking. Can you say more live videos?⁣

Anyway, back to the 52 weeks of baking. This week I challenge you to make buttermilk biscuits. Guess what? You can make buttermilk at home if you can’t go to the store!⁣

I'm interrupting the 52 Weeks of Baking with these chocolate chip banana muffins! They are a healthy twist on a fan favorite. Made without added sugar, these muffins are sweetened with banana, honey and @lilys_sweets dark chocolate baking chips!⁣

I was introduced to Lily's chocolate recently because they are Colorado-based (but sold across the country!). The chocolate is botanically sweetened with stevia, non-GMO and fair trade.⁣

FUN FACT: Did you know that I taught myself how to bake at high altitude when I moved to Denver last summer?⁣⁣
⁣⁣
Moving to Denver was an adventure in itself, but the real challenge baking wise was learning that high altitude can make a HUGE difference in baking (especially cakes and cupcakes).⁣⁣
⁣⁣
Here are a few facts:⁣⁣
• There’s less moisture in the air so dry ingredients are dryer. Recipes need more liquid.⁣⁣
• Lower air pressure means baked goods rise more quickly. Use less leavening agents such as baking powder and baking soda.⁣⁣
• Leavening and evaporation occur more quickly so bake at a higher temperature. As a result, baked goods will be done sooner—lower your total baking time!⁣⁣

I could keep going, but I’ll save more facts for my stories 😉⁣⁣
