Chocolate Biscotti
In a bowl, whisk the espresso powder, flour, cocoa powder, baking powder, and salt. Set aside.
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper & set aside.
Next, cream the butter and sugar together until light and fluffy, about 2 minutes.
One at a time, add the eggs. Then, add the vanilla extract.
Sprinkle the dry ingredients over the egg mixture and mix just until combined.
Gently, fold in the chocolate chips.
Halve the dough & turn both portions onto the prepared baking sheet. Using floured hands, quickly shape each portion of dough into a rough 8-inch by 3-inch log.
Pat each dough smooth.
Bake the loaves about 25-30 minutes, rotating the pan halfway through the baking time. Cool for 10 mins & lower the temperature of the oven.
With a serrated knife cut each loaf diagonally into 3/4-inch-thick slices.
Transfer the slices to the prepared baking sheet. Bake at 325 degrees Fahrenheit for 10-15 mins.
