Line a pan with parchment paper, lightly spray with cooking spray.
Combine crushed Oreo cookies with melted butter until all crumbs are moistened. Press crumb mixture into bottom of prepared pan. Set aside.
Melt chocolate chips in microwave until melted. Preheat oven to 325° F.
Beat cream cheese, about 1 minute. Add in sugar & vanilla, beat well. Add cooled melted chocolate & mix again until combined.
Add the eggs one at a time. Scrape the edges at your stir.
Pour the cream cheese mixture over the packed cookie crumbs.
Smooth the edges. Bake in the oven for 40-45 minutes. Turn off oven and leave cheesecake in oven with door to oven cracked for 1 hour.
Allow the cheesecake to completely cool prior to refrigerating. Allow to chill for 4 hours before slicing.
