Chocolate-Covered Strawberry Brownies

Preheat the oven to 350 degrees Fahrenheit, then line an 8-inch pan with parchment paper.

Using a double boiler, melt the chocolate with the butter in a pan until it is smooth. Stir in the cocoa and set aside to cool.

Meanwhile, whisk together the eggs, sugar, vanilla, and salt in a medium bowl until combined

Whisk the melted chocolate into the egg mixture, then slowly stir in the flour with a wooden spoon. Mix until combined.

The consistency should look just like this!

Next, with a wooden spoon, stir the flour into the melted chocolate until just combined.

Evenly spread the brownie batter into the prepared baking pan and make sure the top is level. Bake the brownies for 30-25 minutes. Allow the brownies to cool for two hours at room temperature.

In the meantime after you have layered the brownies with sliced strawberries, make the ganache. Warm cream over low heat, then remove heat and stir in the chocolate chips until melted.

Spread the warm ganache over the strawberries. This is easy to do with a rubber spatula.

Once the brownies have cooled, slice them and enjoy!

Store the brownies in an airtight container in the refrigerator and eat within 24 hours for the best moist flavors!
