Delicious for the holidays and whenever you want something quick and old-fashioned!
First, in a large bowl, whisk together flour, cocoa powder, baking soda and salt. Set the bowl aside.
In a separate bowl, use an electric mixer to beat butter and ¾ cup sugar together until light and fluffy. Add egg, egg yolk, and vanilla. Mix until combined.
Combine the dry ingredients with the wet ingredients. Mix until just combined.
Chill the dough in the fridge for two hours or overnight. Preheat the oven to 350°F and allow the dough to sit in room temperature.
Line a baking sheet with parchment paper. Next, scoop a tablespoon of dough. Roll the dough into a ball with your hands, dip into granulated sugar, then powdered sugar. Place on cooking sheet and repeat.
Finally, bake cookies at 350° F for 10 to 12 minutes. The cookies will look puffy, but will flatten slightly as they cool. Allow the cookies to cool for five minutes.
