Cookie Dough Frosting  Cupcakes

Preheat oven to 350 degrees F. Place liners in cupcake pan and set aside.

Whisk together flour, baking powder, baking soda, salt, cocoa and espresso. Set aside.

Stir together milk and vanilla. Set aside. Next, beat butter and then add sugar and beat until fluffy: 3-4 mins.

Add eggs one at a time, beating well after each addition. Scrape down sides when necessary.

Pour in one-third of the flour mixture, followed by half of the milk mixture. mix until the ingredients are almost combined.

Batter may look curdled. Keep mixing, then beat until combined.

Pour batter into the cupcake tin with liners, filling each until about three-quarters full.

Bake for 16 to 18 minutes. Allow the cupcakes to cool, then transfer to a wire rack for the frosting.
