Lemon Crinkle Cookies
In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In another bowl, add sugar & lemon zest. Rub the sugar & zest between your fingers.
Add melted butter to the bowl & use an electric mixer to mix until butter is absorbed.
Next, add melted butter to the bowl and use an electric mixer to mix until butter is absorbed.
Add egg and egg yolk and mix until combined, then mix in the lemon juice and vanilla.
Add the dry ingredients to the mixing bowl and mix until combined.
Cover the mixing bowl & refrigerate the dough for at least 2 hours.
When ready to bake the cookies, preheat the oven to 350 degrees F.
Use a medium scoop to scoop out cookie dough balls. Roll each ball in powdered sugar and place on baking sheet.
Bake the cookies 10-12 minutes until the edges have set and the cookie cracks have shown.
