Mini Blueberry Pies

First, roll the pie crust dough out. Use a 2-inch circle cutter to cut circles out of the pie dough.

Then, take a mini muffin tin and place one circle in each opening.

In a medium bowl, mix the blueberries, sugar, corn starch, flour, and lemon zest. Toss with hands or spoon.

Next, divide the filling between the muffin tin pie cups.

Dot the berries with butter.

Cut out the rest of the dough with star-shaped cookie cutters. Set aside.

Place the muffin tin with prepared mini blueberry pies on a rimmed baking sheet & freeze or refrigerate until firm, about 15 to 20 minutes

Preheat the oven to 375 degrees Fahrenheit. Bake the star cut outs for 5-7 mins.

Bake the mini pies for 18-20 minutes until the filling is bubbling. Remove from the oven & place the stars on the pies. Allow the pies to cool.
