S'mores Cookies

These s'mores cookies are soft cookies loaded with mini marshmallows, chopped chocolate, and broken graham cracker pieces.

Tip: Gather all ingredients before starting to save time!

Set aside goodies to top the cookies. Line a baking sheet with parchment paper.

Whisk together the dry ingredients.

Beat the butter and sugars on high speed until light and fluffy.

Add the egg, egg yolk, and vanilla and mix until combined.

Add the dry ingredients to the wet ingredients.

Mix in the flour until just combined.

Add the mini marshmallows, chopped chocolate, and broken graham cracker pieces.

Stir in the goodies with a spatula.

Chill the dough. Shape the dough into balls, place them on baking sheet, and chill for 1 hour.

Bake the cookies in a preheated 350 F oven for 10 minutes.

Remove from oven and quickly add extra mini marshmallows, graham cracker pieces, and chopped chocolate to the tops.

Bake the s'mores cookies for another 2 minutes. Cool on the pan briefly then transfer to a wire cooling rack.
