Soft + Chewy Ginger Molasses Cookies

Preheat oven to 350°F. In a mixing bowl, mix together the flour, baking soda, salt, and spices. Set aside.

With a stand mixer, beat together the butter and sugars for two minutes.

Add the egg, molasses, and vanilla extract. Mix for two minutes until combined.

Slowly mix the flour into the wet ingredients with the mixer on low.

Mix together the sugar and cinnamon in a bowl. Roll the cookie dough into round balls and dip into the cinnamon sugar, then transfer to baking sheet.

Bake the cookies on the baking sheet for 8 to 10 minutes until crinkly and the edges are set.
