Line a sheet pan with parchment paper. Set aside. In bowl, whisk together flour, baking powder, & salt. Set aside.

With a stand or hand mixer, with medium speed, beat the butter and sugar until light and fluffy, about four minutes.

Next, add the egg, egg yolk & vanilla & mix until combined, about 30 seconds.

It should look like this.

Gradually, add the flour to the bowl.

Gently fold the sprinkles into the dough.

Scoop rounded tablespoons of dough & roll them into balls. Place onto the sheet pan, about 3 inches apart.

Flatten the cookie balls into discs. Cover with wrap and chill for 30 minutes.

Preheat oven to 350° F. Remove cookies from the refrigerator, remove plastic wrap, & place cookie sheet in the oven.

Bake for about 10 minutes. Allow to cool for 5 minutes.
