Zucchini Bread Muffins

Zucchini Bread Muffins are moist and tender just like the bread. They are easy to make and ready to enjoy in under 30 minutes!

Gather ingredients and line a cupcake tin with paper liners.

Preheat oven to 375° degrees F.

Whisk together the dry ingredients and set aside.

In another bowl add sugars, vegetable oil, eggs and vanilla.

Whisk together until well combined.

Mix the dry ingredients into the wet ingredients.

Then stir in the shredded zucchini.

Divide the batter among muffin liners. Sprinkle with sugar. Bake for 18 to 20 minutes at 375° F.

Cool muffins in the pan for a few minutes. Transfer to a wire rack to cool completely.
