8Barlett pears, peeled, cored and cut into 1/4-inch slices
1Tablespoonfresh ginger
Zest of half a lemon
1Tablespoonfresh squeezed lemon juice
½cupplus 3 tablespoons sugar, separated
2cupsflour
Pinchof salt
1Tablespoonbaking powder
2Tablespoonschilled butter
⅓cupvegetable shortening
1egg
⅓cupmilk
Instructions
Preheat oven to 425° F. Butter a large (14-inch long) baking dish.
Combine pears, ginger, lemon zest and juice, and 1/2 cup sugar in a large bowl. With your hands, gently toss the pears until evenly coated with ingredients. Spoon into the prepared baking dish.
In another bowl combine the flour, salt, baking powder, and 1 tablespoon of the sugar. Work the butter and shortening in with a pastry blender, two knives, or your fingertips until the mixture resembles coarse crumbs. Lightly beat the egg and milk together, and then slowly stir this into the mixture. Knead lightly, sprinkling on more flour if necessary to form a smooth,not stick, dough.
Break off portions of the dough and place them on top of the fruit, pressing slightly and flattening the dough. Cover the entire surface with the dough pieces to give a "cobbled" effect.
Sprinkle the remaining 2 tablespoons sugar over dough, and bake until well-browned, 35 to 45 minutes. Serve immediately.
