Irish Soda Bread Muffins

First, preheat oven to 400°F. Line a muffin pan with liners. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, sugar, raisins, and caraway seeds.

Next, in a separate small bowl, whisk together the egg, sour cream and melted butter.

With a wooden spoon, gently fold the egg mixture into the flour. Mix until just combined.

Spoon the batter into the prepared muffin tin (I like using an ice cream scoop). Fill the cups about 3/4 full.

Top each muffin dome with granulated sugar before baking.

Bake the muffins for 20 minutes. Once the muffins have baked, turn them on their sides to prevent the bottoms from getting soggy. Enjoy!
