Lemon Curd Tart

This sweet and citrusy lemon curd tart is easy to make for Easter and Mother's Day, and any spring or summer celebration!

Have the tart shell warm and ready to go, and the oven at 375°.

In a medium bowl, whisk together egg yolks and eggs.

Add sugar, and whisk again for 10 seconds.

Whisk for 10 seconds.

Add the lemon juice, lemon zest, and salt.

Transfer to a nonreactive saucepan, and add butter pieces.

Cook over medium-low heat for 5 minutes, stirring constantly.

Immediately pour the lemon curd through a fine mesh sieve into a nonreactive bowl.

Stir in heavy cream.

Transfer mixture to the warm prebaked tart shell. Then place on a baking sheet.

Bake 10-15 minutes.

The tart is done when edges are set and the center jiggles slightly.

Cool to room temp, and chill in the refrigerator for at least 1 hour.

Then remove the tart pan rim and garnish.

Slice and serve chilled.
