Homemade Chipwich Recipe with Chocolate Chips and Ice Cream

First, make the cookies! Preheat the oven to 350°F and line a baking sheet with parchment paper. Measure out all of the ingredients.

With a stand or hand mixer, cream together the butter, brown sugar, and granulated sugar until light and fluffy. It will need to be creamy.

Next, scape down the sides of the bowl with a rubber spatula as needed and add the egg and vanilla.

In a separate bowl, combine the flour, baking soda, and salt. Slowly, fold the dry ingredients into the wet batter with a rubber spatula being careful not to over mix it.

Stir in the chocolate chips and mix until just incorporated.

The dough is just right here! Grab your ice cream scoop or spoon to transfer the dough to the baking sheet.

Roll the dough into round balls. Space the cookie dough about one to two inches apart to prevent them from expanding into each other.

Bake the cookies in the oven for twelve minutes until they are light brown. Remove from oven and allow them to rest for five minutes. Transfer the cookies to a wire rack to cool more, even stick them in the freezer.

Place ¼ cup of ice cream onto a cookie, then top it with another cookie. Place the chocolate chips into a shallow container and roll the sides of the ice cream for a chocolate coating.
