½cup(113g)unsalted butter, melted and slightly cooled
1cup(200g)granulated sugar
2(2)large eggs, room temperature
1 ½teaspoons(7.5ml)vanilla extract
1 ½cups(342.37g)mashed bananas, about 3 bananas
1cup(170g)semisweet chocolate chips
Instructions
Preheat oven to 400℉. Line a muffin tin with paper liners and set aside.
In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
In a separate large bowl, whisk together the melted butter, sugar, eggs, vanilla and mashed bananas until well combined.
Add dry ingredients to wet ingredients and stir just until combined (avoid overmixing). Stir in the chocolate chips.
Scoop batter into prepared muffin tin, filling each cup about three-quarters full. Add a sprinkle of sugar and a few extra chocolate chips on top.
Bake muffins at 400ºF for 18 to 20 minutes or until a toothpick inserted in the center comes out with little to no crumbs. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cooled muffins in an airtight container for up to 3 days.Unsweetened cocoa powder is best since it creates a bolder chocolate flavor. It also reacts with the baking soda so help the muffins rise.
