I haven’t made cheesecake in SO long, which means the cravings have been strong. So strong that I couldn’t wait for a cheesecake to bake and cool so I made no bake raspberry cheesecake bars.
Did you know that you can make cheesecake without baking it? Yep, it’s true and the cheesecake is perfectly safe to eat since it is eggless.
My first time making no bake cheesecake was last year when I made margarita cheesecake bites. I loved the no bake recipe so much that I decided to adapt the recipe to be raspberry flavored.
The adaptation turned out beautifully. The cheesecake is creamy and smooth—you would never know it was eggless! But my favorite part of the cheesecake is the flavor. I included a bit of lemon zest in the cheesecake mixture to brighten up the taste and then of course there is the raspberry swirl on top.
Its combination of tart and sweet makes these no bake cheesecake bites irresistible. Plus, it provides a bright color that really pops, which predicts what the flavor does with each bite.
And let’s not forget the buttery graham cracker crust (also no bake). Like most cheesecake crusts, it is buttery, crumbly and sweet—the perfect counterpart to the rich, creamy and tart cheesecake.
The best part about making no bake raspberry cheesecake bars (aside from it being no bake, duh) is that you can cut these bars in any size you like. Cut yourself a nice big bar to enjoy while watching TV, or maybe cut a bunch of tiny squares to pop in your mouth when you need a pick-me-up.
I personally like the bite-sized version. Store them in a tupperware in the fridge (or freezer in the summer) and you can reach for one whenever you want! It’s also a good size to serve when entertaining a crowd.
