A summer favorite… blueberry peach crumble! This dessert is made with ripe peaches, fresh blueberries and a brown sugar oat crumble topping.
It’s very rare that I find a recipe and think there isn’t one way I could make this better. Well, with this blueberry peach crumble it couldn’t be better, except maybe to double the recipe.
This week I am with family and friends up in Port Clyde, Maine staying at a cottage on the harbor. This quiet lobster town has been a summer getaway for our family since I was born. With cool nights perfect for sleeping, beautiful sunny days and friends to enjoy it with, what more could you ask for?
Between biking, boating and napping, most of our days are spent wondering where the next meal is coming from (we’re big eaters here). Last night I volunteered to make dessert using our fresh blueberries and peaches. Most of the time when I volunteer to make dessert it takes me awhile to figure out what I want to bake and whether I have the ingredients, but this time I had no hesitation—I wanted to bake a blueberry peach crumble.
I’m really not exaggerating when I say how incredibly amazing this crumble was. Believe me I have made my fair share of less than satisfactory desserts—I will be the first to admit it. But dear Lord this crumble was unbelievable.
Freshly cut peaches tossed with farm-bought blueberries and topped with a brown sugar oat crumble, it was really something. And of course it would not have been half as good if we didn’t have Gifford’s vanilla ice cream. The moment that crumble came out of the oven, it was every man for themselves. With the rate the ice cream was melting next to the warm bubbling blueberries and tender peaches and the rate people were trying to get a hands on their own bowl, it was near impossible to get a decent shot of the dessert.
I’m telling you that entire blueberry peach crumble was gone in a matter of minutes. But I managed to snap a few photos and even grab my own bowl. If you have fresh fruit lying around I am urging you to try this recipe. Your friends will thank you!
Blueberry and Peach Crumble
- 2 cups blueberries
- 5 to 6 peaches sliced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 6 tablespoons cold butter cubed
Preheat the oven to 350° F.
In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar and flour. Gently toss until fruit is well coated. Allow the fruit mixture sit while you prepare the crumble topping.
For the crumble topping, take a large bowl and combine the flour, oatmeal, brown sugar, granulated sugar, salt, and cinnamon. Stir together with a whisk. Mix in the butter with your hands until its forms a coarse mixture and there are big crumbles.
Place the fruit mixture in a glass baking dish. Sprinkle the crumble mixture evenly over the fruit. Bake for 40 to 45 minutes, or until the top is browned and crisp and the juices are bubbling. Serve warm with vanilla ice cream.
Crisp can be baked in individual ramekins for 35 to 40 minutes.
*The crumble can be prepared ahead of time and stored in the refrigerator for up to two days. Bake when ready!
