Easy Birthday Cake Blondies

Blondies are the best because they are basically a vanilla version of a brownie. They’re soft, chewy and sweet with a strong vanilla flavor. I love this recipe because you don’t need to pull our the electric mixer. The batter comes together in mere minutes! You’ll be asking everyone when their birthday is just as an excuse bake a batch of these blondies.

Ingredient Notes

Recipe Variations
Make a double batch. Serving a crowd? Double the recipe and bake it in a metal 9×13 pan. Baking time will be closer to 30 minutes.
Try different mix-ins. You can use any color sprinkles depending on the occasion (red and green for Christmas!) If you’re not a fan of white chocolate, swap out the white chocolate chips for semisweet or butterscotch.
Add some frosting. Use my vanilla buttercream recipe to add a sweet layer of frosting on top of the cooled bars.
How to Make Birthday Cake Blondies

- Whisk together the dry ingredientsโflour, baking powder and salt. Set aside.
- Mix the melted butter, sugar and brown sugar together until light in color. Add the egg and vanilla, then mix until combined.
- Add the dry ingredients to the wet ingredients. Mix just until combined. Stir in the white chocolate chips and sprinkles.
- Transfer batter to a parchment-lined 8×8 baking pan. Spread into an even layer. Bake at 350 F for 25 to 28 minutes or until a toothpick inserted in the center comes out with little to no crumbs. Cool completely before cutting.
Expert Tips
Don’t over-mix the batter. When combining the ingredients, mix just until combined. Over-mixing causes dense and tough baked goods.
Use a metal baking pan. For even heat distribution, use a light-colored metal baking pan. Glass pans retain heat longer and cause the edges of the blondies to over-bake.
Measure the flour properly. A kitchen scale it best for accuracy, but if you don’t have a scale you can use the spoon and level method. Don’t pack flour down into the cup.

Storage Tips
Store in an airtight container at room temperature for up to 5 days. Make sure blondies are completely cooled to avoid condensation.
Freeze for up to 3 months. Wrap bars in plastic wrap and aluminum foil to prevent freezer burn. Store in the freezer, then defrost in the refrigerator before bringing to room temperature.
Recipe FAQ
Most likely there was too much flour added. Use a kitchen scale for accuracy or try the spoon and level method. Spoon the flour into a measuring cup and level with a knife (don’t pack it into the measuring cup).
I have not tested this, but I believe the batter will spread too much. Instead, try my sprinkle sugar cookie recipe and mix in 1 cup white chocolate chips.
Yes, but the baking time will be shorter, around 20 to 25 minutes.

Instructions
- Preheat the oven to 350ยฐF. Line an 8-inch by 8-inch pan with parchment paper and set aside.
- In a medium bowl, whisk together flour, baking powder and salt. Set aside.
- In a large bowl, whisk together melted butter, brown sugar and granulated sugar until combined. Add egg and vanilla and mix well. Add the flour mixture and stir just until combined (careful not to overmix). Fold in white chocolate chips and sprinkles.
