The pumpkin filling in this pie is unbelievably good. It is thick and creamy, but sturdy enough to hold a bite. It’s made with extra baking spices (think nutmeg, cinnamon and cloves) to make a flavorful dessert.
While I’m typically a pecan pie fan, something about this pumpkin pie is irresistible. I think it’s the undeniable fall flavors in each bite. Each bite puts a smile on my face and immediately gets me in the Thanksgiving mood.
Like any good Thanksgiving dish, this pie is made with all the rich ingredients—heavy cream, eggs, brown sugar, butter, etc. They give some depth to the otherwise bland pumpkin purée.
The key to an exceptionally good pie though is a homemade crust. I tried store bought, and it doesn’t hold a candle to homemade. The easiest way to make your own crust is to use a food processor. Although, you can always use the old fashioned pastry blender too!
This recipe makes a buttery, flaky crust strong enough to hold the thick pumpkin pie filling. I suggest blind baking the crust for 15 minutes before adding the filling in order to keep the crust thick and sturdy.
