Add toppings. A dusting of confectioners’ sugar, drizzle of maple syrup or fresh whipped cream are perfect options. You can also add fruit, such as pomegranate seeds, sugared cranberries or apple compote.

Use the right bread. Use a thick bread, such as challah or brioche. Texas toast and french bread are also good options. Slightly stale bread works best because it absorbs the custard without becoming soggy. Fresh bread has a tendency to fall apart.
Don’t soak the bread. If the bread sits in the liquid for too long, it will become soggy. About 5 seconds of soaking per side is usually enough!
Make sure the griddle is the right temperature. Preheat the griddle or skillet over medium heat and wait 5 to 10 minutes to make sure it’s hot before adding the bread. Be careful that it’s not too hot otherwise the outside will burn before the inside is cooked.
Make Ahead and Storage Tips
Make ahead the liquid mixture and store covered in the refrigerator for up to 48 hours. Let the bread sit out overnight so it becomes stale (best for soaking up the liquid!)
Store leftovers in the refrigerator for up to 2 days. French bread is best when eaten shortly after it’s cooked.
Freeze for up to 2 months. Flash freeze the cooled slices on a baking sheet until the bread it firm, then transfer to an airtight container or freezer bag for storage.
Reheat in the toaster oven at 350 F for 5 to 10 minutes or until heated through. You can also microwave french toast, but it does have a tendency to become slightly soggy from the steam.

- 3 whole eggs
- 1 egg yolk
- 1 cup (240 ml) eggnog
- 3 Tablespoons flour
- 1 Tablespoon brown sugar

- 8 slices slightly stale, thick bread, such as challah or brioche
Instructions
- Heat griddle or skillet to medium heat.
- In a large bowl, whisk together eggs, egg yolk and flour. Then add the eggnog, sugar, cinnamon, nutmeg, vanilla and salt. Whisk vigorously until combined.
- Dip bread slices in mixture coating well, about 5 seconds per side (donโt soak).
- Grease hot griddle with butter and place bread slices on the griddle. Cook until golden brown, about 2 minutes, then flip and cook for another 2 minutes. Repeat with remaining bread slices greasing the griddle with butter between batches.
- Serve with a dusting of powdered sugar and drizzle of maple syrup. Sugared cranberries or pomegranate seeds make for a festive garnish!
